That just means the olive oil is good. When I started taking it, I was caught off guard myself because it burnt my throat pretty good and first thought it was spoiled or something.

I did some research and found that there is something in olive oil called "oleocanthal", and the more oleocanthals, the better. Oleocanthals have an anti-inflammatory quality to them, apparently similar to ibuprofen.
